Cranberry and citrus cookies and an 80th birthday cake.




Recently at my weekly yoga class we held an informal 80th birthday party for a lady who attend regularly and is a great advert for the benefits of yoga, amazingly enough she had just returned from a month long tour of New Zealand too, so I for one will be carrying out practising yoga as long as I can.


As part of the birthday celebration my contribution was a lemon meringue birthday, which I was pretty proud of (the base recipe being a Fiona Cairns recipe from The Birthday Cake Book), as our yoga class is a quaint country church hall I couldn't adore the cake with candles through fear of setting off the fire alarm, so I resorted to raiding the garden for suitable edible greenery and flowers. I plumped for the fragrant yellow day lily and freshly picked lemon balm leaves.


As the birthday cake was topped with blousey meringues I had a couple of egg yolks left over so I came up with this recipe which is takes it inspiration from several sources, a Gino D'Acampo recipe for sultana cookies from Italian Baking and a lemon drizzle biscuit from Biscuit by Miranda Gore Brown.



What you need
  • 85g butter - softened (needs to be very soft)
  • 115g caster sugar
  • 2 egg yolks - left over from the meringue making
  • Couple of drops of Fiori di Silica essence (from Bakery Bits)
  • 175g plain flour - I used gluten free
  • 50g fine cornmeal
  • 85g dried cranberries - drained after being soaked in warm water for 20 minutes or so
What you do
  • Pre heat the oven to 180c
  • Mix all the ingredients except the cranberries in a mixer , until you have a course dough
  • Add the cranberries to the mix and just incorporate until the mix comes together
  • Take walnut sized lumps of dough and roll into balls, place on a baking sheet lined with baking parchment and flatten slightly
  • The mixture makes approximately 18 - 20 cookies
  • Bake for 15 -20 minutes until golden 
  • Cool on tray for a few minutes before carefully removing o a wire rack to cool fully
  • Store in an airtight tin

Chestnut maple snowflakes


For quite a while I  have been wanting to experiment with chestnut flour, I think this stems from a holiday memory in idyllic Tuscany, when we stayed in a house over looking a chestnut grove and in it was the cutest rustic drying house. I was fascinated with the gnarly trees, the nuts and the recipes they were used in, chestnut flour is used in Italy to make pasta, pancakes and cakes amongst other things.

Chestnut flour is naturally gluten free and is something you will need to seek out if you want to bake with it as its not routinely stocked in most health food shops, this is possibly due to a shortish shelf life but you can obtain it easily by mail order and most shops will happily order it in for you. If you are baking for a coeliac ensure the flour is truly gluten free.

Chestnuts are synonymous with the festive season so I decided to come up with a biscuit recipe which uses this lovely flour, combining it with maple syrup to give a lovely smoky earthy flavour and use my lovely snowflake cutters to give a seasonal twist to this bake. 

This recipe makes about 12 to 15 cookies, depending on the size of the cutters you use. These would make a lovely gift wrapped in cellophane and lovely festive ribbon or a parchment package. Don't expect a crunchy biscuit these are more tender, the snowflakes aren't overtly sweet either.



What you need

  • 12 tbsp chestnut flour (I used Shipton Mill) and little extra for rolling out purposes
  • 3 tbsp melted coconut oil
  • 3 tbsp maple syrup
  • 1 egg 
  • Icing sugar for sprinkling purposes
What you do
  • Mix all the ingredients in a food processor
  • Tip out on to a floured piece of baking parchment, roll out to just a little thinner than a pound coin and using a cutter to cut out the snowflakes.
  • Place on a baking tray (I use a silicon sheet to ensure they don't stick) 
  • Bake in a pre heated oven at 180c for 10 -15 minutes until just turning golden
  • Cool on wire rack, they firm up more on cooling
  • Sprinkle with icing sugar or ice with glace icing if you like.
  • Store in a tin

Spicy gingerbread loaf


























This recipe is a firm family favourite and is pretty quick to whip up with the added bonus that its all made in one pan (less washing up, yeah I say). It has a lovely warm spicy flavour which is perfect with a cup of tea after a walk in blustery autumnal weather when you have been kicking through fallen leaves.

The sultanas are moist and juicy and really add something to this bake and it stores perfectly wrapped in an airtight tin, the recipe also has the bonus of making two loaf cakes.

What you need
  • 1 cup of water
  • 1 cup of granulated sugar
  • 1 cup of sultanas
  • 4 oz Quality margarine or butter
  • 1 tsp bicarbonate of soda
  • 2 tsp mixed spice ( I used Lebuchen mix )
  • 3 tsp ground ginger

Boil this for 10 minutes or so to allow the fruit to swell, then cool fully, add 2 eggs and 2 cups self raising flour and 1/2 tsp cream of tartar, mix well and pour into two 2lb loaf tins, bake in a preheated oven at 160c for 40-50 minutes.

Super easy, wonderful comfort food .......

This would also be served at a bonfire party or for revellers paying a visit trick or treating.

Kiwi fruit cupcakes

I have never made Kiwi cupcakes before despite this being a fruit I often enjoy eating, I like the combination of juicy fruity almost opal fruit flavour and bright green flesh. They are however not a fruit that immediately springs to mind when you fancy baking.


I think kiwi fruit are cute, like little furry creatures that live in the fruit bowl and there are numerous ways of accessing the bright green flesh, my preferred method being slicing and I have made kiwi fruit jam in the past with great success.

For this recipe you can dress with butter cream and a kiwi slice or just leave plain and sprinkle with demerara sugar for some crunch. Its an easy tasty bake which works with gluten free flour as well as normal wheat flour.



What you need
  • 2 large kiwi fruits or 4 small kiwi fruits, peeled and cut into 1/2 inch chunks
  • 2 cups of plain flour 
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1/2 cup sugar
  • 1/2 tsp ground cinnamon
  • 1 egg - free range
  • 1 cup skimmed milk
  • 1 tsp vanilla paste
  • 1/4 cup coconut oil - melted
  • Demerara sugar - for sprinkling
  • Buttercream (optional)
  • Slices of Kiwi for decoration
  • Large muffin cake cases

What you do
  • Pre heat the oven to 200c /180c fan
  • Line the cupcake tin with the case cakes
  • Beat the eggs, oil, milk and vanilla together in a large bowl, I used my mixer. 
  • Sieve the flour,baking powder, cinnamon, sugar and salt into the bowl and mix together quickly
  • Fold in the chopped kiwi fruit
  • Spoon the mixture into the cake cases - this mixtures makes approximately 12 large muffins / cupcakes.
  • Sprinkle the tops with demerara sugar if using
  • Pop into the oven and bake for 20 minutes or so until well risen, golden and cooked through when tested with a cocktail stick
  • Remove from oven and cool on a wire rack
  • When fully cool, decorate with buttercream if you wish
