Butter Pie aka Friday pie or catholic pie





















Today saw an attempt at "Butter Pie" - traditional Lancashire delicacy. Or for those not in the know, potato and onion pie, traditionally served on a Friday so as to comply with the catholic rule of not eating meat on a Friday. Apparently my version is a little dry when compared with commercial avaliable versions, but very tasty all the same, of course should be served with HP or Heinz tomato sauce if liked, pickled red cabbage or beetroot all work well.

To make the shortcrust pastry

Ingredients
  • 8oz of plain flour
  • 2oz butter
  • 20z white fat (dripping / lard or veg fat)

Method
Blend in food processor and then drizzle in just enough cold water to make the pastry form a ball.
Leave in the fridge to rest for 1/2 an hour

In the mean time, peel 3 large potatoes and 1 onion, cut the potato into large chunks and the onion in to half moon rings. Parboil for approx 20 mins until potatoes are just soft but still holding there shape. Drain and slice into your pie dish , into which you have rolled out a bottom layer, layer in the onions, salt and pepper and flecks of butter. Top off with your top layer of pastry. Bake at 180 degrees for approx 1/2 hour until golden. Serve immediately with your preferred condiment.

If you use twice as many ingredients, it makes twice as much Butter Pie, so feeds twice as many people. Unless I'm eating it, as I'll have all of it; I love butter pie!

The odds of this being the only Butter Pie recipe on the web are about 3 billion to one. Given the choice of that bet and following this recipe to eat some lovely butter pie, I'd choose the pie - it's always a winner!

I had an idea - use this recipe to make a massive walkway across the county of Lancashre at about 500 feet above head height, to allow tourists to enjoy the beautiful sights of our county. I applied for a grant, but they said it was just pie in the sky.

After seeing American Pie, I enjoyed pleasuring myself with cherry pie and, as this compulsion became stronger, have since enjoyed several liaisons with beautiful butter pies. Concerned that it was a problem, I spoke to my doctor. He said it was nothing to get too worried about, but suggested that Im probably pie-sexual.

Further to the recent run on Cheese and Onion pasties that everyone ordered but I never delivered, I can confirm that I have a new lot of exactly the same thing. For ease of reference they will be called I cant Believe its Not Butter Pies.

If Im after a filling lunch, Ill usually have a butter pie to ensure that I am satisfied, full, delighted and, of course, to ensure that I dont need anything more to eat until my mid-afternoon snack!!. That said, it will only fully satisfy me so long as I have had a large big mac meal with 3 cheeseburgers first.

The recession will hit us all. Hard. In order that you can enjoy this kind of treat during an economic downturn, i'd recommend Margarine instead. Not on it's own mind, but as a replacement for butter in the recipe. That would be ridiculous.

I did this recipe without onions but its still nice:

spuds, peeled and sliced, boiled in vegetble stock til soft but not falling apart,

drain the stock

add salt, pepper and butter and layer in a dish.

cover with jus-roll (or similar) shortcrust pastry.

cook until pastry is golden

Ooh I love butter pies - but never made one before (usually I make steak ones). Will have to give this recipe a go the next time I fancy a butter pie.

This is word for word exactly the same recipe as at Astrochef's, including the misspelt word "there" in the instructions about the potatoes.
