Greek Orzo salad


The first time I ate Orzo (or the Greek equivalent (kritharáki)) was over 20 years ago on a very hot day in Delphi in Greece, home of the legendary of oracle in a stunningly situated taverna overlooking the gorge.  So that's how an orzo based Greek salad came about plus we have a couple of cucumber plants which are producing legendary quantities of fruit, so a Greek influenced pasta salad it had to be.

Delphi was the one place in Greece I would like to return to as it situated in the mountains, so its a little cooler than the plains and there was history at every turn, plus the views were amazing. Our hotel simply furnished overlooking that impressive gorge,I can't for the life of me what it was called but its probably still there as its that sort of place.

On to our delightfully simple recipe, which makes an ideal accompaniment to grilled chicken or fish or as part of a mezze or salad selection for a barbecue or party

What you need
  • Roughly 1 dessert bowl - Orzo pasta - cooked and cooled by rinsing in cold water 
  • 1 Red onion, peeled and finely chopped
  • 1 whole Cucumber -peeled and chopped in to small chunks
  • Tomatoes - chopped into small chunks or cherry halved
  • Feta cheese - crumbled
  • Bunch of fresh basil
  • Freshly ground pepper
  • 4 tbsp Olive oil 
  • 1 tbsp Lemon juice
  • 1 tsp Honey
  • 1 tsp Mustard - I used Dijon
What you do
  • Cook the orzo pasta according to the instructions on the packet, once cooked rinse under the cold tap to cool rapidly.
  • Place in a large bowl with the chopped onion, cucumber and tomato
  • Crumble the feta cheese over the top and tear the basil leaves also on the top
  • Quickly mix the olive oil, lemon juice,  honey and mustard in a separate bowl to form a dressing, my tool of preference is a small whisk, season with some freshly ground pepper
  • Pour on to the contents of the large bowl and toss to ensure everything gets coated with dressing
  • Ta dah ! your salad is ready. Chill if you like and it keeps for a couple of days in the fridge.

Hot smoked salmon, fennel and pea pasta


I often buy ready cooked hot smoked salmon when I am out shopping as its a good fridge standby for a healthy quick meal with salad, its also popular with MR LF too. Most supermarkets and even some fishmongers normally stock a packed version alongside the smoked mackerel.

This dish hardly needs a recipe as its so easy and can be whipped up in minutes, from store cupboard and freezer basics, the dish is enhanced by using fresh from the garden fennel fronds, but if you don't have them dried dill or fennel will work almost as well.

What you need
  • Pasta - macaroni or farfelle work well, gluten free if you like
  • 1 pack of hot smoked salmon - skin removed and flaked
  • Frozen petit pois or peas
  • Dill or fennel - fronds, freshly chopped or use dried herbs
  • Creme fraiche
What you do
  • Cook the pasta according to the instructions on the pack, for the last 3 minutes add the frozen peas and bring back to the boil to finish cooking the pasta and the peas
  • Drain the pasta  and peas using a colander, return back to pan which now contains very little water and toss with 3 tbsp of creme fraiche and the flaked salmon.
  • Strewn with the fresh dill or fennel fronds, and lightly toss
  • Serve with a little freshly ground black pepper.
Delicious and so simple supper can be on the table in 15 minutes or less

Ragbag pasta with roasted courgette, basil and mint

Well its that time of year again when our courgette plants are yielding a courgette a day and my quest is to find new and novel ways to serve this vegetable. This recipe came about as a way to use up the part bags of pasta that you often find lurking in the cupboard waiting for a little love, it works fine with gluten free pasta which I find remains al dente for longer than normal pasta.



I also spotted that this months cooking with herbs had the theme of basil, at its peak flavour wise at this time of year, I combined it with mint for a pesto flavour twist and lots of freshly grated Parmesan cheese. A delicious, frugal and tasty dish, rich in courgettes and herbs. This dish is healthy and fresh tasting and makes use of some great seasonal ingredients that just sing summer.

What you need
  • Courgettes (Zucchini) - approx 3 medium sized cut into 2cm slice, cut in half
  • Olive oil - good drizzle
  • Fresh basil- 3 sprigs
  • Fresh garden mint - 3 sprigs, leaves picked off
  • Parmesan cheese - handful
  • Cooked pasta (cooked to the instruction on the packet)
  • Black pepper - freshly ground
What you do
  • Toss the chopped courgettes with olive oil and place on an oven tray
  • Roast in the oven at 180c for about 40 minutes or so until the courgettes are softened and tinged golden brown
  • Whilst the courgettes are roasting, cook the pasta so that it ready when the courgettes are ready.

  • Drain the pasta and toss with the roasted courgettes and oil , add the cheese and the herbs torn into small pieces

  • Toss and then serve with freshly ground black pepper
