Credit Crunch Munch Round Up - July 2016



I have been very tardy of late and I am quite late in posting the round up of all the lovely recipes entered into Credit Crunch Munch for July whilst we were hosting.

Credit Crunch Munch is the creation of Fab Food 4 All and Fuss Free Flavours, as a way of sharing moneysaving or frugal recipes, which are low in cost but high in flavour and above all amazing food. Hosted both by the creators and other food bloggers in turn its a fun way of sharing recipes.

You can always find inspiration over on the Credit Crunch Munch page, for August the linky is taking a break but will be back with a bang in September,  so check out the page to find this months host.

On to our round up, all in all we had 11 lovely entries for July, not bad at all considering it the start of school holidays in the UK and lots of bloggers are away.

Our first link up was from yours truly with some pretty tasty (if I do say so myself) Lemonade Scones, ideal for a quick impromptu bake when you have guests.

                                 

Our next link up came from the lovely Shaheen who blogs at Allotment to Kitchen with Simple tumeric potatoes with fava bean and carrot chilli, a colourful tasty dish to accompany a hearty vegan chilli.

                                   

Our entry from Fab Food 4 All is some very summery Lemon and Elderflower curd cupcakes a perfect seasonal bake, ideal for afternoon tea or a summer picnic.

Next we have a delicious fish dish of Crispy Grilled Mackerel with lemon and garlic from Family, Friends, Food. Wonderfully healthy and a perfect dish for alfresco eating.

                                                                 We love the crispy, smoky skin & juicy, flavourful flesh of this delicious grilled mackerel! Packed with Omega 3, it's a healthy family favourite dinner.

EasypeasyFoodie joined in the fun with a Kale and Red Onion Dhal with buckwheat recipe, a tasty looking easy recipe perfect for the Sirt Diet.

Camilla of Fab Food 4 All brought us another seasonal recipe perfect for sipping in a summer garden, a refreshing Old fashioned Lemonade recipe

Our next recipe is for Smoky Tofu Sandwiches from The Taste Space, this sustaining healthy sandwich looks amazing.

Our lovely linky party was then joined by Ren Behan with Kasza and lentil salad with griddled courgette and halloumi.  The beautiful dish sums up what makes for wonderful summer eating.

The Veg Hog linked up with some very interesting Potato Spelt rolls, cleverly using some leftover roast potatoes in the recipe.

                                                

Roast Chicken and a Country walk shared with us a fab recipe for Quickest leftover chicken stir fry, which would make a great supper recipe when you need to get food on the table fast.

Our final recipe is for a Smoky Butternut Squash soup from The Improving Cook , frugally made in the slow cooker.

We Should Cocoa Round Up - Eggs !

Wow, 27 enteries for this month's We Should Cocoa, thanks to everyone who took the time to link up to this month challenge. Our theme was EGGS, in all there forms, including chocolate eggs, which alot of our participants used in creating their delicious entries.

                                   

Hopefully the theme I chose worked well for you all, eggs are such a versatile ingredient in all there forms, I am always amazed at the level of creativity from my fellow food bloggers and once again they didn't disappoint, I want to eat them all......

                                                     Fudgy, rich chocolate loaf cake topped with a chocolate glaze and Cadbury Creme Eggs. Easy, quick and simple to make! Creme Egg Chocolate Loaf Cake     
       
                                                                 

First up we have a Creme Egg loaf cake from Kerry Cooks a delicious decadent bake featuring the seasonal creme egg.

Next, non other than yours truly - Lancashire Food with a Marbled banana and chocolate hazelnut loaf cake decorated with crispy chocolate eggs, it has the added bonus of being gluten free.

A fun cute Banana Choc chip cake hiding as a Minion Cake from Green Gourmet Giraffe was our next link up.

An amazing Illusion Cake was linked up by Only Crumbs Remain, so clever. Hiding underneath is a Raspberry and white chocolate cake.

Clever Janice at Farmers Girl Kitchen has managed to create a Hot Cross Bun Mug Cake which can be whipped up in a flash. I am a great fan of mug cakes.

Over at Jo's Kitchen we have a Easter Galaxy Golden Egg Pinata cake, a perfect easter treat if I ever saw one.

Baking Queen - Lucy got creative and created with Cadbury Creme Egg Chocolate Cookie Bars

Mainly Baking - came up with the inspired idea of marrying hot coss buns and chocolate custard to make the ultimate bread and butter pudding dish - Chocolate Hot Cross Bun and Butter Pudding

                                                                 

                                                

Kat at the Baking Explorer linked up with these cute Chocolate Meringue Easter Nests, which I am sure would be popular at any Easter get together.

A Chocolate Easter Cake hopped up next from The More Than The Occasional Baker, so cute. Love the Chocolate Ducky on top.

I loved Frys Chocolate Creme's as a child and Cakeyboi has stuffed his brownies full of them, for this decadent treat of Frys Chocolate Creme stuffed  Fudgy Brownies. Save me a piece please !

Mummy Mishaps created this delightful cake - Malteser Malteaster Bunny and mini egg cake for a friend (I want to be your friend), I just love the combination of the dinky bunnies and eggs used to decorate the cake.

Some very Spring celebrating cupcakes were linked up by Charlotte's Lively Kitchen - Easter Nest Cupcakes , perfect for parties.

Another cupcake up next, but probably are healthiest bake of this round up from Elizabeth's Kitchen Diary in Shetland, her Slightly More Healthy Easter Cupcakes use raw cacao.

Easter chicks, everywhere ! How to Cook Good Food presented us with some Easter Caramel Meringues, here chocolate being the mini eggs and eggs being the star ingredient.

More chicks, this time as actual cakes clever Caroline at Caroline Makes used a special cupcake kit from Lakeland to create these Easter chick Cupcakes.

And lastly two brownies receipes both featuring chocolate eggs, we have Broken Easter Egg Brownies from Dom at Belleau Kitchen and Food Feasting and Fun with their Chocolate Mini Egg Brownies.

Credit Crunch Munch June Round up

                       
June was a busy month for us at Lancashire Food hosting not one but two blog challenges, so here's the round up for Credit Crunch Munch, a blog challenge that encourages frugality yet not at the cost of flavour. Some amazing money saving ideas have been linked up and I must say none of them look frugal but they are, bloggers are just so creative.

                                   
                              
Our first entry is from Fabfood4all with an amazing Rhubarb and marzipan cake which I am sure tastes amazing and is definitely something I will be bookmarking to try later, I'm pretty sure I have some marzipan languishing in a cupboard somewhere.

                                            


Next up is myself with a Rhubarb and anise syrup and frugal jam, utilising rhubarb from the garden to make both syrup and a frugal jam from the fruit leftovers. I even used a recycled bottle !

                              

Jibberjabber kindly linked up a very yummy looking Microwave lemon sponge pudding recipe, which looks so tempting and is whipped up in a flash and belies its humble ingredients.

                              

I love Tapenade, so was very pleased to see A seasonal Veg table - Gothic black olive tapenade being linked up. Using up a half jar of olives she had lurking in the fridge. Great idea !

                             

The above delightful creation is Utterly Scrummy Food's - peach traybake. Created after buying a bargain punnet of peaches for 30p. Doesn't it look amazing....

Next along came Spicy "Kermit" raw green cavalo nero soup from Sarah at Maisoncupcake, this fantastically healthy soup utilising a bogof on the cavalo nero (kale) just screams eat me. If you want to know why kermit check out the post.

Tales from a kitchen shed linked up an Easy bean burger recipe, I am sure this would be great for garden bbq's for the summer and would be very popular with friends and family.

                                          

Eee Bah Gum linked up a mushroom and cheese risotto, a great moneysaving dish and very tasty too. We eat a lot of risotto in the Lancashire Food household.

                                        Peach Melba Rice Delight

Tales from a Kitchen shed kindly linked up another couple of recipes,firstly a Peach melba rice delight, which would be suitable for serving at a dinner party in my humble opinion. It looks so beautiful and a great use of seasonal stone fruit. I also love that the rice pudding is cooked in a slow cooker.

Another slow cooker recipe this one utilising the humble jacket potato, the ultimate comfort food. Great idea to use a slow cooker to cook the spuds. Thanks Tales from a Kitchen Shed, another one for the must try list.

Lastly we have an Italian fritatta with vegetables from the MyLittleItalianKitchen, as she says an excellent picnic dish if served cold.

                               

A quick late addition is from Choclette over at Chocolate Log Blog with some very delicious chcolate bean burgers with chilli sauce, what an inventive combination.
