Gill Osborne - Middle Holly Cottage





We have another shy featured foodie this month, so instead of a picture of Gill we have a photo of the lovely Middle Holly Cottage which Gill runs with her husband Andy, as a country B and B and now Tea Room and Cake Parlour. Despite hailing from other parts Gill loves Lancashire and its produce which she uses extensively in her establishment.


What is your favourite cookery or food book or publication?
That’s difficult bearing in mind I must have over 100 cookery books on my shelf! I mostly use books by Annie Rigg, Rachel Allen, Mary B, Dan Lepard. Pinterest is great and so is the Internet. Plus I do purchase several monthly publications too.


What sentence sums up Lancashire Food to you ?
Good, honest, down to earth and wholesome food, maybe with a few tweaks here and there!


If you weren’t doing what you do now, what would you like to be ?
That’s, easy, I’d love to run my own high street bakery selling high quality bread, cakes and patisserie.


Which piece of kit could you not do without ?
My 35 year old Kenwood Chef, my third arm. I’ve used it nearly every day and it’s only let me down once. In my opinion it was the best wedding present we got!


Who would join you at your ultimate dinner party and why?
Just my family, they’re the most important people in my life. I don’t think I could handle anyone famous, I’d be too on edge and not sleep for days before!


What would you tell your younger self?
Go for it, believe in your own ability, don’t be afraid of what others think, just be your own confident self


Describe your style in three words
Honest, Creative, Confident


What was your latest foodie gadget purchase?
A little Russell Hobbs blender, great for whizzing herbs or bits of anything really. Oh and my microplane greater – every kitchen should have one!


What is your greatest achievement to date?
Opening the tea room at Middle Holly Cottage, my dream to bake for others to enjoy.


What is the worst mistake you have made?
Not going to catering college when I left school, it wasn’t the thing to do then but gosh do I wish I had. Everything I know now is pretty much self taught.


Tell us a secret about yourself ? It may be something we wouldn’t expect !
I was a Rosebud Queen in our village fete when I was 8 years old. I still have the head-dress I wore.

This months featured foodie is John Caffery, Manager / Maitre D of Duk Pond in Chorley towncentre, John is passionate about local seasonal food and is happy to head up this newly opened deli / cantina / tapas bar. Chris & Christine Thomasson - Rivington Chocolates


Partners Chris and Christine  Thomasson are Horwich based artisan chocolatiers who formed  Rivington Chocolates in November 2014. 

Combining the best Callebaut sustainably produced chocolate with fresh tasty fillings using local produce whenever possible. 

They work from home, producing small batches to ensure our chocolates are always fresh, trying new flavour combinations and always looking to build and improve our product. 

They are excited to have made their first batch of bean to bar chocolate; 70% Ghanian dark; vegan – described as ‘Lush’ by a customer and it is hoped their second batch will live up to this.

Rivington Chocolates can be found every month at Bolton Artisan Market and other local events.





What is your favourite cookery or food book or publication ?
The Good Housekeeping Step by Step Cook Book, I've had it since I was 18; its been very well used.

What sentence sums up Lancashire Food to you ?
Tasty,comforting and full of surprises.

If you weren’t doing what you do now, what would you like to be ?
A hippy or our cat Mo.

Which piece of kit could you not do without ?
I have a chocolate mould that is a beautiful domeshape- allows endless variations that look amazing.-

Family and friends – always the most special times.

What advice would you give to your younger self ?
Be yourself, be yourself, be yourself.

Andrew Whiting - Beech's Fine Chocolates, Preston






This months foodie is Andrew Whiting - Chairman of Beechs Fine Chocolates, Preston. A wonderful local chocolate company who's chocolates are absolutely delicious, they even have a range of chocolates suitable for vegans. Their fine chocolates can be found online or via many fine retailers. Onto our questions, you know the drill......



Recently featured on BBC Televisions "Who's the Boss !" the company has been making chocolate since 1920.


What is your favourite cookery or food book or publication ?
I learned to cook for myself at university and then found I could “mimic” most things I had eaten elsewhere. I enjoy cooking but would love to know how to make amazing ring doughnuts and French macaroons.  My favourite food writer is Nigella Lawson.


What sentence sums up Lancashire Food to you ?
Lancashire food is delicious and I’d say “Oooh aaar, that were greeeat!”


If you weren’t doing what you do now, what would you like to be?
Since I was a boy I have always wanted to be a pirate. However, these days I think I would be happy travelling around the world on a long holiday, but I admit that still sounds a bit like being a pirate.


Which piece of kit could you not do without?
I think my iPad would be very difficult to do without. I use it for everything and I write notes on all sorts of things while on the move. Recipes, meeting notes, research, novels and reminders.  The to do list is the most used item on the device.


Who would join you at your ultimate dinner party and why?
My guests would be my entire family and Jimi Hendrix, (if we are allowed a non – living guest from the past). My wife and children are all wonderful and there are a number of questions I would still like to ask Jimi.   


What advice would you give to your younger self ?
The advice I still give is “if you can imagine yourself doing something that you have never tried before, you can treat it as experience”

Positive and fair


What was your latest foodie gadget purchase ?
Well I recently bought two smoothie drink makers which I know are a current trend.  They were Christmas presents for two of my children but if I had a smoothie maker I would make lots of different and delicious home made soup.


What is your greatest achievement to date ?
The greatest achievement was turning Beech’s Chocolates from a loss making company to a profitable company after the initial purchase. This took much effort and teamwork with the workforce. The food industry is a roller coaster.


What is the worst mistake you have made ?
Apparently this was when I once put a navy blue shirt on with black trousers


Tell us a secret about yourself ? may be something we wouldn’t expect !
Something I tend to keep secret is that I have never let the last drop of wine empty into my glass since 1978. This is a superstition from when I lived in France at that time. It’s supposed to be bad luck but apart from this, I believe that “you make your own luck.”

Kevin Stickley from the Cottage Loaf Bakery in Eccleston

This months foodie is Kevin Stickley from the Cottage Loaf Bakery in Eccleston, Chorley. Kevin is very shy like most bakers so we don't actually have a picture of Kevin. Needless to say he's an earlier riser like all craft bakers and proudly still bakes on the premises.


I have been at the bakery since April 1989, when my family moved from Northampton. After getting married in 1998, my parents and sister retired and left me in sole charge. With a good team of staff and help from my wife, Lesley-Ann, the bakery is still going strong today.

We produce traditional bread, cakes pies and sandwiches, and also supply local businesses as well.





What is your favourite cookery or food book or publication ?
The Craft Bakers Book of Bread Making.


What sentence sums up Lancashire Food to you ?
It’s straight forward, tasty and well worth searching for a good producer.


If you weren’t doing what you do now, what would you like to be ?
I nearly joined the Navy before I became an apprentice baker, so, a Naval officer by now.


Which piece of kit could you not do without ?
I need my oven and mixer, but I have a scotch scraper that I have used for 27 years, it’s still got a few years left in it.


Who would join you at your ultimate dinner party and why?
Paul Hollywood, to keep the wife happy, and Peter Kay, very funny man and I think he appreciates a good pie as well.


What advice would you give to your younger self ?
Choose staff more wisely, don’t be frightened to experiment and try new ideas, take more time out.


Describe your style in three words
Laid back, traditional and dedicated


What was your latest foodie gadget purchase ?
My 1955 Hobart mixer has died, so I have joined the world of spiral mixers.


What is your greatest achievement to date ?
Surviving for 27 years, while 6 bakeries around us have disappeared.


What is the worst mistake you have made ?
Putting business before family.

Philippa James - A Great Loss to Lancashire Food - A Special Edition of a Quick Bite of Lancashire Food


Published with the kind permission of Foody Phil - Bite Local / Bite Network, as a special edition of A Quick bite of Lancashire Food in tribute to Philippa James who passed away recently. I met Philippa on a couple of occasions and she will be sadly missed by the food community in Lancashire for her passion and enthusiasm about all things food in Lancashire.

It was with great sadness that I recently learned about the passing of a dearly loved, extremely passionate local food personality, and friend, Philippa James.

Often affectionately referred to by her nickname, ‘Tigger’, so called, quite appropriately, after the larger than life and rather mad bouncy character from Winnie the Poo; Philippa first had a successful career in sales and marketing, later going on to enjoy a number of successful food related roles: She cooked on yachts in the Caribbean; owned a deli and tea room; operated her own cookery school; won a gold award for her Lancashire Tea Bread at the Great Taste awards; delivered lessons to school children about WW2 rationing; worked on Lottery funded ‘Healthy Living’ courses, as well as many more valuable contributions!

Also, a regular contributor on BBC Radio Lancashire, Philippa was particularly well known in local food circles around Lancashire. She was often invited to perform her always entertaining cookery demo’s at markets and food festivals, and was a major force when it came to promoting Lancashire produce, once appearing on BBC TV’s ‘Flog It’ programme and cooking her famous ‘Lancashire Tortilla’. Later, she found another outlet to demonstrate her unbounded enthusiasm for food and local produce, when she occupied the role of Food Editor at Lancashire Life magazine. Here she produced numerous articles extolling the virtues of local food and drink businesses, and became extremely well known and loved throughout the county.

A Lancashire ‘lass’ through and through, Philippa’s much too early death came as a great shock to the local food community she was so close to. She will be very fondly remembered and sadly missed by all!

Richard Lowthian - Ham & Jam Coffee Shop Preston




Born in the West End of Newcastle upon Tyne a true Geordie. I moved to Lancashire in the 1990's having met my wife Cindy who was at Newcastle University we have a daughter Felicity. I have worked for some fantastic social housing organisation for over twenty years in the North East and North West of the country and made some great friends during my social housing career. In the summer of 2014 I had a fantastic opportunity to take voluntary redundancy and follow my dreams. So for the past twelve months I've develop our business plan for Ham and Jam coffee shop Ltd and we are hoping to open Autumn 2015. 

Ham and Jam is now open and can be found on 50-52 Lancaster Rd, Preston, near the Guild Hall.




What is your favourite cookery or food book or publication?
Anything by Rick Stein as I seem to have more of his books than anyone else’s.


What sentence sums up Lancashire Food to you?
For me it’s got to be Morecambe Bay Shrimps, Lancashire Hot Pot and good old, Lancashire cheese!


If you weren’t doing what you do now, what would you like to be?
I am very lucky as I've moved on to what I've always really want to do!


Which piece of kit could you not do without?
San Remo Zoe Two Group Espresso  Machine it’s a piece of kit for Ham & Jam coffee shop that we are investing in to ensure fantastic quality coffee for our customers.


Who would join you at your ultimate dinner party and why?
Sid Bowen (my father in law who I sadly have never met) as the stories I’ve  heard about him from my wife, mother in law, and sister’s in law make me laugh. 
Sir Bobby Robson a true Geordie footballing legend so many stories so much knowledge. 
For the musical entertainment Alan Hull a Geordie singer song writer founding member of Lindisfarne and of course Bryan Ferry Roxy Music. 
To help in the kitchen obviously Rick Stein and Antonio Carluccio and of course finally Cindy my wife (but not in the kitchen) to keep the conversation flowing as she never shuts up!         

What advice would you give to your younger self?
Take a risk and live your dream no matter what it is!

Enthusiastic, honest and passionate!

What was your latest foodie gadget purchase?
Lincat six plate commercial oven for Ham and Jam

What is your greatest achievement to date?
Living so long in Preston Lancashire I am an exiled Geordie and I miss the Toon!

What is the worst mistake you have made?
I don’t believe in ‘making mistakes’ per se as I’ve always learnt so much from my experiences I  would not be where I am now without these experiences   


Tell us a secret about yourself? May be something we wouldn’t expect! 
Growing up living on a council estate in the west end of Newcastle John Carver ex Newcastle United Manager and Eamon Donnelly (Declan’s Donnelly’s oldest brother Ant and Dec fame) were great childhood friends who I grew up with, had a laugh with and attend school with. My claim to fame and dinner party story.

November 2015 - Colin Shepherd - Clog & Billycock




We are pleased to feature this month -Colin Shepherd - Deputy General Manager at The Clog and Billycock a member of  the Ribble Valley Inns Group. Colin is passionate about local food and great service and has worked in many quality establishments across the country. He is also a talented artist and loves all things military and of course his latest passion cycling. 

The Clog and Billycock is situated in the lovely village of Pleasington and serves high quality British Food, seasonal which is locally sourced.

What is your favourite cookery or food book or publication ?
New York Cult Recipes by Marc Grossman.

Great Wholesome food produced by passionate people and celebrated locally and beyond.


If you weren’t doing what you do now, what would you like to be ?
Pilot (Preferably Fast Jet and Low Level) or Musician ( ideally Royal Marines Band Service)


Which piece of kit could you not do without ?
My Bicycle – just wish I could have the time to do more cycling


Who would join you at your ultimate dinner party and why?
Difficult choice to make and it could be a big dinner party so I have picked 2
My Grandad – Just a great man to talk to with some great interests
Mozart – A musical genius who wrote some of the most amazing music I have listened to and I imagine he would have some great stories to tell.


What advice would you give to your younger self ?
Work harder at school and have more belief in yourself and your abilities

Impulsive, impatient, Obsessive


What was your latest foodie gadget purchase ?
A Food Mixer. The old one needed replacing with something a bit more powerful and capable


What is your greatest achievement to date ?
Selling my first piece of artwork – it was only small and I did not get much, but the fact that someone was willing to pay for something I had created and wanted to put it on their wall made me proud


What is the worst mistake you have made ?
Dropping a 1000 gallon container of double cream form a forklift truck at a dairy I worked at in Whitby. My plan of going in early on New Years Eve to get finished early was scuppered by the length of time it took to clean up. A messy and expensive accident to say the least. A rumour also spread that a significant amount of Whitby harbour turned white.


Tell us a secret about yourself ? may be something we wouldn’t expect !
I once reversed a works van into my bosses garden wall. There was no damage to the wall and he did not see it happen. There was some damage to the back of the van though. It was weeks before he spotted it and blamed it on someone in the car park so I left it at that!

September 2015 - Tim Proctor - Proctors Cheeses

Hi everyone, this month's choosen foodie is non other than Tim Procter of Procters Cheeses, also the man behind that amazing cheese brand Kick Ass Cheddar,  the cheese with a tasty cheddar twang yet a still creamy cheese.

The Kick Ass range includes several different varieties the newest been a Rioja with red onion chutney which I must say is absolutely delicious toasted, which I got to taste at the most recent Clitheroe Food Festival.

You can get in touch with Kick Ass on facebook, Twitter and even order via Amazon, plus its stocked by quality local cheesemongers as well. Procters Cheeses are based in Chipping right at the heart of Lancashire Cheese Country.

What is your favourite cookery or food book or publication ?
Anything from Padstow chef Rick Stein.  I like his no-nonsense approach to cooking and the sourcing of ingredients


What sentence sums up Lancashire Food to you ?
Just like our world famous Lancashire cheese that is unique, in that it has 3 distinctly different varieties in one type of cheese – I think that sums up the county as a whole…hugely diverse and yet offering the best of everything.


If you weren’t doing what you do now, what would you like to be ?
If I hadn’t become a cheese factor, I am sure I would have joined the British Military.  My secondary school days were spent as a boarder at Bentham Grammar School in North Yorkshire.  A lot of my friends were children whose parents were in the military and always took a keen interest in where they were stationed and the roles they had.


Which piece of kit could you not do without ?
The TV remote…I live in a house with 4 females, and I need to feel that I’M IN CHARGE


Who would join you at your ultimate dinner party and why?
MALE: Robert De Niro as he’d definitely give the evening a bit of an edge.  
FEMALE: Cameron Diaz…nuff said really.


What advice would you give to your younger self ?
Make the very most of every opportunity that comes your way.  You WILL get the chances….TAKE THEM

DETERMINED – POSITIVE – EASY GOING


What was your latest foodie gadget purchase ?
A new kitchen for wife Sue


What is your greatest achievement to date ?
Being married to the lovely Sue for the last 22 years and raising two beautiful daughters (Georgina 17 / Emma 15)


What is the worst mistake you have made ?
Sometimes being too soft with people that I actually don’t know that well, allowing them to mistake my generosity and good nature for weakness

Russell Lambert of M and O Fish, Darwen and Chorley Markets



This month's foodie is Russell from M and O Fish who have a stall on Darwen market and also on Chorley Market on Tuesday, they have also set up a website and trade with the public and supply fresh fish to many pubs and restaurants in the area. 


M & O Fish is a family run business.Russell has worked as a fishmonger for over 20 years over a variety of markets over the North West.

A question which we are asked by many is why are we called M & O Fish?
The business is named after our two daughters Megan and Olivia.

We sell a large selection of fresh fish and seafood.We also stock Game when in season and offer a local delivery service and also offer UK courier delivery service.


What is your favourite cookery or food book or publication?
I don't use cookbook's. I use my own inspiration or my wife's with fresh food and
fresh ingredients.

What sentence sums up Lancashire Food to you?
Showcasing great local traders as businesses.

If you weren’t doing what you do now, what would you like to be?
I left school two weeks early to work on Blackburn fish market and I can't see myself changing my job from a fishmonger. I wake up everyday and I am glad to go to work,Not a job for many but I enjoy it. I get a real kick that our customers are happy with our quality.

Which piece of kit could you not do without?
Knifes and Pin-boners.

Who would join you at your ultimate dinner party and why?
Have to say local chefs as they don't get enough recognition.

What advice would you give to your younger self?
Run a business as its your own, as it maybe one day.

Hard-working, determined and imaginative.

What was your latest foodie gadget purchase?
Have to say our vac - packer at work and home.

What is the worst mistake you have made?
Not setting up for myself sooner and being self-employed.

Nadia Southwood of Flap O Jacks








This month's featured foodie is Nadia from Flap O Jacks, the round flapjack company from Preston, made with love and delicious natural ingredients, I have been lucky enough to sample there lovely flapjacks on several occasions and they are amazing, you can see a blog post here.


What is your favourite cookery or food book or publication?

I adore everything about Lorraine Pascale,I have all her cookery books, she makes everything so simple and understated.


What sentence sums up Lancashire Food to you?

I only need two words to sum up Lancashire Food ‘wholesome and delicious’


If you weren’t doing what you do now, what would you like to be?
I have a curiosity for forensics and pathology, so if I wasn’t doing what I do now I’d be a Forensic Scientist.


Which piece of kit could you not do without?
The piece of kit I couldn't do without would have to be our lovely big oven.


Who would join you at your ultimate dinner party and why?
My ultimate dinner guest would be the actor, Ray Winstone. Do you seriously need to ask me why!


What advice would you give to your younger self?
The advice I would give my younger self would be have the courage and confidence to be whatever you want to be, don’t follow the crowd, don’t join the rat race, just do whatever makes you happy.


Describe your style in three words
The three words I’d use to describe myself would be witty, motivated and thoughtful.


What was your latest foodie gadget purchase?
My latest foodies gadget purchase was a Nutribullet drinks maker, obviously this was for personal use and nothing to do with flapjacks!


What is your greatest achievement to date?

My greatest achievement to date (besides my two beautiful children) would be having the confidence to become self employed and turning Flap O Jacks into a thriving business and more recently being nominated for the EVA awards (Enterprise Vision Awards).


What is the worst mistake you have made?
The worst mistake I have made is not trusting my gut instinct. Always trust your first gut instincts. If you genuinely feel in your heart that something is wrong, it usually is.


Tell us a secret about yourself? May be something we wouldn’t expect!
I have a cleaning obsession, I’m probably verging on the borders of OCD but I love the smell of Detol in the house.
