I have recently fallen in love with this ingredient (so much so its a regular now in the shopping basket)as its so versatile and can be used in so many ways, so here is a recipe from the Total website that I have tried in my own kitchen, created by nutrionist Martin MacDonald as a weightloss recipe.

Spicy Fishcakes with sweet potato wedges and yoghurt dip.

  • 40g Total Greek Yoghurt (0%)
  • 200g sweet potato, cut  into chunky wedges
  • Olive oil - drizzle
  • Paprika spice mix
  • 100g salmon
  • 50g prawns
  • 1/2tsp thai curry paste (panang paste)
  • Handful of fresh coriander leaves - chopped
  • Pinch of salt
  • 25g green beans
  • 160g mixed salad ( lettuce, cucumber, spinach, celery)
  • 10g coconut oil
  • 1/4 chilli
  • Freshly ground pepper
Method
  • Preheat the oven to 375F / 190C / Gas mark 5
  • Place the wedges in a bowl, mix with salt, pepper and spice mix and place on a baking tray. Cook in the middle of the oven for  approximately 45 minutes
  • Place the salmon, prawns , thai curry paste, coriander and a pinch of salt in a food processor and blend until a paste is formed. Add the beans and blend again. Turn out of the processor and place in a bowl.
  • Refrigerate for about 10 minutes
  • Prepare the salad on your plate
  • With cool hands shape your fish mixture into small patties
  • Heat a little oil in a frying pan and fry for approximately 10 minutes on each side over a low heat
  • Prepare the dip by mixing the copped coriander and chopped chilli with the greek yoghurt
  • Once the wedges have nicely crisped and the fish cakes ready, place on your serving plate with the yoghurt dip.
We really enjoyed this recipe, particularly the spicy fish cakes which were very easy to make and the lovely cooling yoghurt dip to offset the spices in the fish cake. The recipe is enough to serve 2 adults. If you tempered the chilli and thai red curry paste it would also be suitable for the whole family.

Spiced yogurt chicken

More playing with the samples from Total Yoghurt and I have created a savoury dish this time, ideal to serve with a salad or flavoured  rice or couscous You could even cook it on the barbeque if the weather is playing ball.. The spicing in this dish is very much to personal taste so feel free to add or take away as you see fit , many herbs and spices would work equally as well as the paprika and cinnamon. I used the 0% fat yogurt in this recipe and it worked really well, I had no problems with it splitting, you just create a lovely coating which tenderises your chicken  and helps it keep moist whilst being grilled.

Ingredients
  • 2 free range skinless chicken breast
  • 1/2 cup of Total Greek Yogurt 0%
  • 1/2 cup of olive oil
  • juice and zest of a lemon
  • 2 cloves of garlic - crushed
  • 1 tsp smoked paprika
  • 1/4 tsp cinnamon
  • Pinch of Sea Salt
  • Freshly ground black pepper
Method
  • Place all your ingredients in a large freezer bag
  • Mush all together and leave in the fridge for a minimum of 30 minutes
  • Preheat your grill
  • Remove the chicken breasts from the bag and place under the grill, discard the excess marinade
  • Grill on both sides until slightly charred , this takes about 8 mins per side but does depend on the thickness of your chicken, just check the chicken is cooked through before serving

Studded rosewater, almond and yogurt cake

I have been having some fun with the Total Greek yogurt I have been sent for recipe development, the inspiration for this cake came from wanting to recreate the moist almondy  yogurt cakes common in the Mediterranean or middle east, that are normally syrup drenched, but instead I wanted to stud it with raspberries or in my case tayberries.

This cake can be served plain drenched in icing sugar or decadently drizzled with rose honey and served with more creamy yogurt on the side, as in the photograph.

Ingredients
  • 250g Total Greek Yogurt
  • 150ml sunflower oil or rapeseed oil
  • 2 large free range eggs
  • 200g self raising flour, sifted
  • 100g ground almonds
  • 150g golden caster sugar
  • 1 tbsp rosewater
  • 1 tsp baking powder
  • Handful of fresh raspberries or tayberries
  • Pinch of salt
Approx 20cm spring from cake tin - oiled

Preheat oven to 160c fan, 180c normal / gas 4

Method
  • Place your flour, almonds, sugar, baking powder and salt in a large bowl
  • Add the yogurt, oil, eggs and rosewater in the same bowl and mix throughly incorporating as much as was possible.
  • Once well mixed, pour / scrape into your prepared tin, level and stud with berries
  • Place in your pre heated oven and bake for approximately 30 minutes until well risen and golden. Test with a skewer to ensure it is cooked through.
  • Remove from oven and allow to cool in tin for approximately 15 minutes and then remove outer ring.
  • Serve with more yogurt and drizzled with rose honey
