Yuletide Gingerbread - dairy and gluten free

Who doesn't like sticky gingerbread, the prefect accompainment to present wrapping and one sure fire way of putting in the festive mood.

This gingerbread is the sticky cakey kind and not the crunchy gingerbread man type of gingerbread, again not a beauty and a recipe that practically always sinks slightly in the middle but it has a beautiful spicy warmth with just the right amount of cloves. Easily made dairy and gluten free if required so its a recipe for all.

A tip for you - lightly oil the container you measure the treacle in otherwise it will make a very sticky mess.

What you need
  • 50g soft brown sugar
  • 50g granulated sugar
  • 120g quality vegetable margarine (dairy free) - I use Pure
  • 1 large free range egg
  • 150ml treacle
  • 300g Self raising flour ( I have made this gluten free and it works fine, you may need to a little more water)
  • 1 tsp baking powder
  • 1 heaped tablespoon ground cinnamon
  • 1 heaped tablespoon ground ginger
  • 1/2 tsp ground cloves
  • Pinch of salt
  • 60ml of warm water
2lb loaf tin - oil sprayed and lined

What you do

  • Prepare the baking tin
  • Preheat the oven to 175c
  • Cream the sugars and margarine in a mixer , until well mixed, fluffy and lighter in colour
  • Add the rest of the ingredients to the mixer
  • Mix quickly until you have a smooth mixture
  • Scoop into the prepared tin and place in the pre heated oven
  • Bake for 50 - 55 minutes
  • Cool initially in the tin
  • Remove from tin to a wire rack to cool fully
  • Wrap and store in an airtight tin, if you can leave it for a few days its starts to go delightfully sticky.
  • Delicious served with a cup of tea

Apple Gingerbread pudding - gluten free

I think it must be the cusp season for apples as recently I have noticed that many of the eating apples in the fruit bowl aren't lasting for very long before starting to go soft. So here's another recipe that uses up apples that are slightly past their best, I hate waste.

This pudding is ideal served with custard, cream, creme fraiche or ice cream and the slight spicing of the sponge is great when there is still a slight nip in the air. This is a twist on the classic Eve's Pudding and made gluten free by switching out the flour for gluten free flour.

What you need
  • Oven proof dish (I used a Pyrex pie dish)
  • Oil spray
  • 6 eating apples- peeled, cored and chopped into bite sized pieces
  • 3 tbsp soft brown sugar
  • 50g quality vegetable margarine or softened butter
  • 1 tbsp maple syrup
  • 1 tbsp golden syrup
  • 7 tbsp skimmed milk
  • 2 free range eggs - beaten
  • 225g plain gluten free flour
  • 1 tsp mixed sweet spice
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1 tsp baking powder
What you do
  • Pre heat oven to 180C
  • Oil spray the baking dish
  • Place the chopped apples in the prepared dish and sprinkle with the soft brown sugar
  • Melt the syrups and margarine / butter and allow to cool, then add the milk and the beaten eggs
  • Pour this into a large bowl and sieve on the flour, spices and baking powder , mix together until well incorporated and pour over the apples and level.
  • Place in the oven and bake for 45 minutes or so until golden and well risen.
  • Serve hot or cold.

Spicy gingerbread loaf

This recipe is a firm family favourite and is pretty quick to whip up with the added bonus that its all made in one pan (less washing up, yeah I say). It has a lovely warm spicy flavour which is perfect with a cup of tea after a walk in blustery autumnal weather when you have been kicking through fallen leaves.

The sultanas are moist and juicy and really add something to this bake and it stores perfectly wrapped in an airtight tin, the recipe also has the bonus of making two loaf cakes.

What you need
  • 1 cup of water
  • 1 cup of granulated sugar
  • 1 cup of sultanas
  • 4 oz Quality margarine or butter
  • 1 tsp bicarbonate of soda
  • 2 tsp mixed spice ( I used Lebuchen mix )
  • 3 tsp ground ginger

Boil this for 10 minutes or so to allow the fruit to swell, then cool fully, add 2 eggs and 2 cups self raising flour and 1/2 tsp cream of tartar, mix well and pour into two 2lb loaf tins, bake in a preheated oven at 160c for 40-50 minutes.

Super easy, wonderful comfort food .......

This would also be served at a bonfire party or for revellers paying a visit trick or treating.

Sticky Gingerbread cake

I normally bake at weekend and was inspired by a friend on facebook who was making Ginger cake so I decided to give a new recipe a try. The recipe proved very easy to make and produced 2 loaves of gingerbread.

Ingredients
  • 225g self raising flour
  • 1 tbsp ground ginger
  • 1tsp bicarb
  • 1 tsp ground cinnamon
  • 1 tsp mixed spice
  • 115g butter
  • 115g treacle
  • 115g syrup
  • 115g dark brown sugar
  • 275ml milk
  • 1 egg - beaten
Grease and line 2 x 2lb loaf tins

Method
Preheat the oven to 180c . Start by sifting the flour, bicarb and spices into a bowl. Add the cubed butter and rub in like you are making pastry, you could use a food processor. Warm the treacle and sugar in a pan or in the microwave, do not boil. Melt the sugar in the milk by gently warming. Allow to cool until lukewarm.

Quickly mix the milk mixture and then the syrup mixture with the flour, then add the egg, mix well and then pour into the prepared tins.

Bake for approx 45 mins until when tested with a skewer and is fully cooked.

Turn out of tin when fully cooled, wrap and leave to go sticky for at least a day if you can resist that long .
