Chickpea and lentil and spinach cheats curry


Chickpeas are a great standby staple and the other day I had a craving for a warming curry, weird I know considering its August in the UK, but the summer weather this year has been really disappointing and even quite cool on a couple of occasions. So I turned to my trusty store cupboard to provide a healthy vegan curry for our supper.

Raiding the cupboards and freezer, I came up with this wholesome tasty recipe which used tinned chickpeas, dried red lentils and some leftover frozen homegrown tomatoes from last year and a couple of chunks of frozen spinach leaves I had forgotten were in the freezer.

The recipe made plenty so had ample to freeze or to take to work in a container for lunch the next day and as you in control of the spice level you can make this curry as hot and steamy as you wish.

The other bonus is as you are using canned chickpeas you can also make this fabulous chocolate mousse for dessert using the retained canning juice.


What you need
  • 1 tin of chickpeas - drained but remember to retain the canning liquid for other recipes.
  • 2 handfuls of cherry tomatoes or the equivalent in canned or frozen tomatoes
  • 2 tbsp tomato ketchup (organic or homemade is best)
  • 1 tbsp mango chutney (optional)
  • 2 - 3 tbsp curry powder
  • 1 tbsp garam marsala
  • 3 blocks frozen spinach
  • 1 large white onion chopped finely
  • Coconut oil or vegetable oil 
  • 3 - 4 tbsp red lentils
  • Vegetable stock
  • Freshly ground pepper - to taste

What you do

  • Heat the coconut or vegetable oil in your pan
  • Add the onion and fry gently until starting to soften but not colour
  • Reduce the heat slightly and add the spices and cook for a few minutes moving about so they don't burn.
  • Add the rest of the ingredients to the pan, using enough vegetable stock to cover the legumes and frozen vegetables.
  • Now bring to a gentle simmer and cook until the frozen vegetable are cooked and the lentils are almost undetectable. Stirring occasionally, this took about 20 minutes for me.
  • Season with freshly ground pepper increasing the spices if so required.
  • Serve with roti or boiled basmati rice
  • If you have any fresh coriander then this would be a good garnish
The dish froze beautifully and also benefits from cooling and reheating another day so that the flavours are more well rounded.

Chickpea brownies, a healthy gluten free treat


Ever the one to try something different I have in the past made brownies with beetroot, avocado, dates and many other ingredients, this recipe is no different but the featured ingredient being chickpeas. Yes, folks chickpeas which make these brownies lovely and fudgey and deliciously gluten free. You can't detect the chickpeas at all in the bake, these brownies keep well for a few days in an airtight tin but I assure you they won't last that long !

The added bonus is you also get the must have ingredient of the moment - aquafaba or the humble juice from the bean can, which can be whipped up in many different delights and is a useful vegan egg substitute. More of this in the next post.

What you need
  • 1 can of chickpeas - drained and rinsed, save the bean juice
  • 2 free range eggs
  • 1/3 cup cocoa powder - I used Green and Blacks
  • 2/3 cup caster sugar
  • 2 tbsp coconut milk
  • 1 tsp coffee extract
  • 2 tsp baking powder
  • 1 pack of dark chocolate chips
What you do
  • Pre heat oven to 180c
  • Oil spray and line square approx 9"by 9" cake tin
  • Place all ingredients in food processor and blend until smooth
  • Pour the mixture into the prepared tin and bake for approximately 25 - 30mins until cooked thoroughly, test with a cocktail stick
  • Cool in the tin and cut into pieces after 20 minutes or so
  • Serve alone or with creme fraiche or Greek yogurt

Chickpea and almond biscuits - naturally gluten free


I have come to the conclusion that gluten free biscuits and cookies are pretty easy and I really can't see any reason to buy the overpriced ones you see in stores. This recipe uses besan flour or chickpea flour (garbanzo to our American friends) as its base combined with ground almonds, the resultant biscuit is deliciously crunchy with a slight nutty flavour, you can add spice or flavourings to your delicious biscuit.


Besan flour is available in the ethnic area of the supermarket or at specialist stores, just watch out for added ingredients if you need it gluten free. Chickpea flour is one of the cheaper naturally gluten free flours and is used frequently in Asian cuisine.



What you need
  • 1 cup of ground almonds
  • 1 cup of chickpea flour (besan)
  • 3/4 cup soft light brown sugar
  • 1/2 cup butter (or if diary free coconut oil)
  • 1 egg yolk (large egg)
  • 1 1/2 tsp of your chosen spice ( cinnamon is nice)
What you do 
  • Preheat the oven to 180c
  • Line 2 baking trays with a silicone sheet or baking parchment.
  • Mix all the ingredients except the egg in a mixing bowl until the fat is rubbed in.
  • Add the egg yolk and combine.
  • Form ball of the mixture using your hands and press down on the prepared baking sheet
  • Bake for approx 15 minutes until golden and starting to firm
  • Cool initially on the baking sheet and then fully cool on a wire rack, the biscuits will firm up on cooling.

Spiced apple chickpea cake


Recently I have been experimenting with cake recipes that are naturally gluten free or are made with alternative flours or no flour at all. I have previously dabbled with cakes made with chickpeas and beans previously including one that ended up being featured in The Clandestine Cake club cook book and they turned out well. The gluten free chocolate cake is of particular note , the link is here.



This recipe is based on the same basic recipe but I fancied including grated apples and spices to provide a fruity flavour in place of the chocolate plus I have bought a lot of apples recently as I am also planning on having a go at using apple sauce / puree as a butter alternative in baking so watch out for that post too.



Chickpeas or garbanzo beans (as our friends across the pond call them) are used as the flour substitute yet you still get some rise, the recipe is also lower fat as it has no added oils or butters. The cake is lovely and moist and is great served on its own or as a dessert if served with cream, custard or yogurt. You would never know it contains chickpeas at all, plus it smells amazing whilst baking all cosy and comforting.



What you need
  • 1 can of chickpeas, drained and rinsed
  • 3 eggs beaten
  • 1 cup of caster sugar
  • 1 tsp baking powder
  • 2 tsp lebucken spice (I used Steenbergs but you can come up with your own spice mix, may be incorporating cinnamon, cloves, ginger or what ever else takes your fancy)
  • A couple of cox apples - grated keep the skin on 
  • Lemon rind
What you do
  • Grease a square cake tin roughly 9" by 9"
  • Pre heat your oven to 180C
  • Pulse the chickpeas in a food processor until they become a fine paste , now pulse in the rest of the ingredients.
  • Pour the mix into your prepared tin, don't be alarmed the mixture will be very runny
  • Bake for at least 45 minutes until golden, set and risen. Test with a skewer to make sure its cooked through
  • Cool fully on a wire rack
  • Cut into squares and store in an airtight tin for a couple of days if it lasts that long
